Make this easy, restaurant-style Cajun Chicken Pasta with a rich, creamy sauce. It is a satisfying weeknight dinner ready in under 30 minutes.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning (store-bought or homemade)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 8 ounces penne or fettuccine pasta
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. While the pasta cooks, season the chicken pieces with salt, pepper, and half of the Cajun seasoning.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  4. Add the chopped onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  6. Reduce the heat to medium-low. Stir in the heavy cream and the remaining Cajun seasoning. Let the sauce warm through, stirring occasionally, but do not boil.
  7. Stir in the grated Parmesan cheese until the sauce is smooth and creamy. If using, add the sun-dried tomatoes.
  8. Return the cooked chicken to the skillet. Add the cooked pasta to the sauce and toss everything together until the pasta is fully coated.
  9. Taste the pasta and add more salt or pepper if needed.
  10. Serve immediately, garnished with fresh parsley.

Notes

  • For a spicier dish, increase the amount of Cajun seasoning or add a pinch of cayenne pepper to the sauce.
  • You can substitute chicken breasts with boneless, skinless chicken thighs. Adjust cooking time as needed.
  • To make this a one-pot meal, cook the pasta directly in the sauce using extra broth, following the pasta package directions for liquid absorption.
