Make these easy, crowd-pleasing buffalo chicken sliders baked on soft Hawaiian rolls. They feature juicy shredded chicken tossed in spicy buffalo sauce, topped with melted cheese, and finished with a savory garlic butter crust. This one-pan recipe is perfect for game day or quick family dinners.

  • 1 (12 count) package Hawaiian sweet rolls
  • 3 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 cup buffalo wing sauce (Frank’s recommended)
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a medium bowl, combine the shredded chicken, buffalo wing sauce, and ranch or blue cheese dressing. Mix until the chicken is fully coated.
  3. Slice the entire package of Hawaiian rolls horizontally, keeping the rolls connected. Place the bottom half of the rolls into the prepared baking dish.
  4. Distribute the buffalo chicken mixture evenly over the bottom layer of rolls.
  5. Sprinkle the shredded cheese evenly over the chicken mixture.
  6. Place the top half of the rolls over the cheese layer.
  7. In a small bowl, whisk together the melted butter, minced garlic, Worcestershire sauce, and onion powder to create the garlic butter topping.
  8. Brush the garlic butter mixture evenly over the top of the rolls.
  9. Cover the baking dish tightly with aluminum foil. Bake for 15 minutes.
  10. Remove the foil and bake for an additional 5 to 10 minutes, or until the cheese is fully melted and the tops of the rolls are golden brown.
  11. Let the sliders rest for 5 minutes before slicing between each roll. Serve immediately as party appetizers or game day food.

Notes

  • For extra flavor, add a dash of smoked paprika to the garlic butter topping.
  • If you prefer a tangier flavor, substitute half of the ranch dressing with cream cheese, softened.
  • Serve these hot chicken bites with extra blue cheese dressing or celery sticks on the side.
