1 pound fresh or frozen broccoli florets
1 can (10.5 ounces) condensed cream of chicken soup
1/2 cup mayonnaise
1 cup shredded sharp cheddar cheese, plus 1/2 cup for topping
1/4 cup milk
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1 cup crushed butter crackers (like Ritz)
4 tablespoons butter, melted
Instructions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
If using fresh broccoli, steam or boil the florets until tender-crisp. If using frozen, thaw them completely and drain off any excess water. Place the cooked broccoli in a large bowl.
In a separate bowl, combine the cream of chicken soup, mayonnaise, 1 cup of cheddar cheese, milk, onion powder, and black pepper. Mix until smooth.
Pour the soup mixture over the broccoli and stir gently to coat everything evenly. Transfer this mixture to your prepared baking dish.
In a small bowl, mix the crushed butter crackers with the melted butter. Sprinkle this topping evenly over the casserole mixture.
Bake for 25 minutes.
Remove the dish from the oven and sprinkle the remaining 1/2 cup of cheddar cheese over the top. Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the topping is golden brown.
Let the casserole rest for 5 minutes before serving.
Notes
For a richer flavor, substitute cream of chicken soup with cream of mushroom soup.
If you want a little crunch, add 1/2 cup of chopped celery to the mixture before baking.
This recipe works well as a holiday party recipe side dish.
