Make these easy, wholesome banana oatmeal pancakes using just three ingredients. They are naturally sweet, quick to prepare in a blender, and result in a satisfying, fluffy breakfast stack.

  • 1 cup rolled oats (quick or old-fashioned)
  • 2 large eggs
  • Optional: 1 teaspoon cinnamon
  • Optional: Cooking spray or butter for the pan

Instructions

  1. Place the rolled oats into a blender. Blend on high speed until the oats resemble a fine flour consistency.
  2. Add the ripe bananas and eggs to the blender. If using, add cinnamon now.
  3. Blend the mixture until it is completely smooth. This may take 30 to 60 seconds. Scrape down the sides if needed.
  4. Let the batter rest on the counter for 5 to 10 minutes. This step allows the oats to absorb moisture, which helps create a fluffy texture.
  5. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with cooking spray or butter.
  6. Pour the batter onto the hot skillet to form small pancakes, about 1/4 cup of batter per pancake.
  7. Cook for 2 to 3 minutes per side, until golden brown and cooked through. Flip carefully.
  8. Serve immediately with your favorite toppings.

  • Use very ripe bananas for the best natural sweetness and texture.
  • For extra protein, add 1/4 cup of cottage cheese to the blender with the other ingredients.
