Make this satisfying, high-protein chicken salad using ripe avocado for natural creaminess instead of mayonnaise. It is a quick lunch idea, ready in 15 minutes, perfect for meal prep and low-carb diets.

Ingredients

Scale
  • 2 cups cooked, shredded chicken breast
  • 1 large ripe avocado, mashed
  • 1/4 cup plain Greek yogurt (optional, for extra tang)
  • 2 tablespoons fresh lime juice
  • 1/4 cup finely chopped red onion
  • 2 stalks celery, finely chopped
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of garlic powder

Instructions

  1. Place the shredded chicken in a medium bowl.
  2. In a separate small bowl, mash the avocado until smooth. Stir in the lime juice immediately to help prevent browning.
  3. Add the mashed avocado mixture and the Greek yogurt (if using) to the chicken. Mix well until the chicken is evenly coated and creamy.
  4. Fold in the chopped red onion, celery, and cilantro or parsley.
  5. Season the salad with salt, pepper, and garlic powder. Mix everything together until combined.
  6. Taste the salad and adjust seasonings as needed.
  7. Serve immediately or cover and chill for later meal prep.

Notes

  • To keep the salad green longer, press plastic wrap directly onto the surface of the salad before sealing the container.
  • Serve this low-carb chicken salad in lettuce cups, over mixed greens, or stuffed into bell peppers for a gluten-free option.
  • For a sweeter flavor profile, add 1 teaspoon of honey or maple syrup to the mixture.
